Corn Bread

Hubby has been baking again, this time a delicious old family recipe for Corn bread.

1 cup self raising flour
1/2 cup nutty wheat
small tin cream style sweet corn
3/4 cup milk (batter must be sloppy) adjust milk accordingly
2 beaten eggs
pinch salt
1 tablespoon oil
Beat all together.
Pour into a greased loaf tin
Bake for 35 -40 minutes until cooked.
cool slightly on wire rack
Great to eat when still warm with a spread of butter with soup.
Also great with ham/cold meat and salads.

Hi Bettina, I am not too sure what the equivilent is in USa, but it seems you can buy nutty wheat flour. Its sort of whole wheat flour but the litte seeds are finer and has a lovely nutty taste and texture. If you can't find nutty wheat then i think use whole wheat.
